Fried Egg Sandwich with Bacon, Kale and Pomegranate

I spend the week walking the streets scheming. Looking for lots of little projects to occupy my time over these dislocated weekends.  Though on the upside, the dog is delighted. Oxtail last week, bone marrow and ham hocks this week. Her favourite though was when I brought home the pigs head. Could.Not.Believe.It. Though anything positive in her life is equally weighted to BE totally be the BEST THING ever.

This was a simple sandwich from last weekend and not part of a weekend project (all posts to follow later).

I'd gone to Fallon & Byrne to pick up some oysters, and grabbed a couple of pomegranates on the way out. In between braising the oxtail and waiting for the pastry to chill, I was famished and made a quick fried egg sandwich. Still having some fabulous bacon from McCarthy's of Kanturk leftover I wanted to try something a little different. I thought of making a ketchup out of pomegranate - but that would have taken too long, so instead made just added the fresh pomegranate seeds to tablespoonful of mayonnaise and spread it on the bread. It worked really well, not too surprising now I think of it. The sweet, sourness of the tart seeds working well as a loose sauce against the cured bacon. Hardly revolutionary, but something pleasantly different for a weekend snack.
